Finca El Jardín is located in Planadas, Tolima, Colombia, and is the agricultural project of fourth generation producer Jorge Elías Rojas, known for his experimental approach and relentless focus on quality.
In previous years we already worked with his Honey processed Chiroso, while this year we selected an anaerobic Pink Bourbon, a variety celebrated for its aromatic complexity and elegant cup structure.
Jorge cultivates several varieties across 3 hectares of land and, since 2016, has been refining his own fermentation and drying protocols. After a strict hand selection of ripe cherries, the coffee undergoes a controlled anaerobic fermentation designed to enhance intensity and aromatic depth while preserving clarity and balance.
The cup shows notes of tropical fruit, ripe strawberry, yellow peach and pink florals, supported by a velvety texture and a long persistent finish.
