Juan Antonio Conta Castro carries on the coffee tradition with a care that comes from experience and a life spent among the plants. After losing his first farm, he rebuilt everything with "Suenos de Café" in Alto Patico, La Plata-Huila, where he grows Geisha and Caturra in an agroforestry system. His wife works alongside him, overseeing the drying processes and quality control.
The process is careful and patient. Harvesting takes place only when the cherries are perfectly ripe. After depulping, the coffee ferments in clean tanks for a controlled amount of time, allowing it to develop complexity without losing finesse. Once washed, it is laid out on raised beds or in parabolic structures, where it dries slowly, turned several times a day to ensure uniformity and aromatic cleanliness.
The finca is a simple, lively place, surrounded by crops that coexist with coffee and by a natural environment that makes the work more human. Those who come here discover a coffee that expresses altitude, rich soils, and prized varieties. In the cup, notes of bergamot, jasmine, ripe peach, and a clear sweetness reminiscent of light honey and cane sugar emerge.
